serves 2
1 large potato, peeled & chopped
1 medium parsnip, peeled & chopped
1 medium carrot, chopped
2 T milk
1 T butter
1 t brown sugar
1/2 t salt
Boil vegetables in water until tender. Drain. Mash with rest of the ingredients.
This is served here with Oven Fried Chicken Strips.

This sounds delicious! I am going to try it. I also want to try to make a parsnip pancake - kind of like making a potato pancake.
