These are so light and yummy, I dare say this is my favorite blueberry muffin recipe.
makes 12 muffins
2 eggs
1 C sugar
1/2 C oil
1/2 t vanilla
2 C flour
1/2 t salt
1/2 t baking soda
1 C sour cream
1 1/2 C blueberries
Preheat oven to 400 degrees. Grease 12 muffin cups or line with paper muffin liners.
In large bowl, beat eggs, gradually adding sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla.
In a separate bowl, mix flour, baking soda and salt.
Stir dry ingredients into egg mixture alternating with sour cream.
Gently fold in blueberries.
Scoop batter into prepared muffin cups.
Bake for 20 minutes.

Is this your mom's recipe? I remember the time your family came to WI...and stayed with us. She was making blueberry muffins for the group to eat on the drive home.
Hey, Kim! No, mom doesn't like me posting most of her recipes. She's "secretive" like that :) Although her recipe is really good too!
