WHAT'S FOR DINNER?: HOMEMADE RUSTIC PITA BREAD



HOMEMADE RUSTIC PITA BREAD
makes 8 or 16 halves

a little more than 1 C warm water
1 1/2 t yeast or 1 packet yeast
1 1/2 t sugar
1 T oil
1 t salt
3 + C flour

Place all ingredients into a bowl and stir until combined. Cover with a clean kitchen towel and rise for 1 hour.
Turn dough onto a lightly floured surface. Gently roll and stretch dough into a 12 inch tube.


With a sharp knife, divide dough into 8 pieces. 


Roll each into a smooth ball. 


With a rolling pin, roll each ball into a 6-7 inch disk. 


Set aside on a pizza stone, greased baking sheet or lightly floured countertop. 
Let rise about 30 minutes until slightly puffy. 


Preheat oven to 500 degrees. Bake for 4-5 minutes until puffed and tops begin to brown. Remove from oven and let cool on a wire rack. 


Cut in half and gently slice the center to make the pocket.  

Store in ziploc bag in refrigerator for several days or in the freezer for up to 2 months.
