RED VELVET WHOOPIE PIES
Makes approx 24 pies
cookies:
1 box red velvet cake mix
2 eggs, lightly beaten
1/2 C oil
1 T bourbon
filling:
8 oz cream cheese, softened
1/4 C butter, softened
2 t evaporated milk
1 t vanilla
1/2 C sweetened, shredded coconut
4 C powdered sugar
Preheat oven to 375 degrees. Mix cake mix, eggs, oil and bourbon together well. Roll into walnut size balls and place 2 inches apart on a greased baking sheet.
Bake 8 minutes. Cool on pan for 10 minutes then transfer to wire rack to cool completely.
For the icing, combine cream cheese, butter, evaporated milk, vanilla & coconut. Add in powdered sugar, 1 C at a time.
Spread generous amount of icing on the bottom of a cookie.
Sandwich it with another cookie, pressing firmly so icing comes all the way to edges. Repeat.
