WHAT'S FOR DINNER? CHUNKY PASTA SAUCE


We were blessed to have my grandmommy June (aka Maimie), my Auntie Jo, Auntie Bobbie & "Auntie" Peggy in our home for dinner and some time together this evening before they return home tomorrow. 
I love eating with friends and family! 
Good food, good conversation and with Canaan around, great entertainment.

CHUNKY PASTA SAUCE

pasta of your choice, cooked
2 T oil
2 zucchini or other summer squash or a mixture, chopped
1 C fresh mushrooms, chopped
1 medium diced onion
2 cloves garlic, minced
2 medium tomatoes, chopped
1 jar pasta sauce
salt & pepper, to taste
fresh basil leaves
Parmesan cheese

Heat the oil over medium high. Add onion & garlic and cook several minutes.

Add squash and mushrooms. Cook several more minutes, stirring occasionally.

Add tomatoes and sauce. Turn the heat down to medium. Cook covered for approx 10-15 minutes, stirring occasionally.

Serve over a bed of pasta. Top with fresh basil and Parmesan cheese.

Makes approx 6 C chunky pasta sauce.
