WHAT'S FOR DESSERT? BANANA PUDDING

It's always nice to have a dessert after dinner when friends come over, especially if they've been traveling a long distance. This is one of my favorite desserts. It's an easy dessert to make and OH so good!

BANANA PUDDING
(1 quadrupled this recipe but really only needed to double it for 10 people.)

3/4 C sugar
1/2 flour
1/2 C milk
2 C hot/scalded milk
2 egg yolks
2 T butter
1 t vanilla
2-3 ripe bananas, sliced or chopped
1 box of vanilla wafers

Mix sugar & flour in a saucepan. Add milk and cook over medium heat. Add in scalded milk (you can heat it in the microwave). When it begins to thicken, incorporate the egg yolks which means take some (about 1/2 C) of the pudding out of the pan and mix it well with the yolks, then add all together into the pudding, mixing well. Stir constantly so that it doesn't lump or burn. When it becomes the desired thickness, add butter. When melted, remove from heat. Add vanilla. Add bananas. Set aside.

In a serving bowl, layer vanilla wafers with pudding, starting with the wafers and alternating between each, also ending with a neat layer of vanilla wafers.
