WHAT'S FOR DESSERT? CHOCOLATE SHEET CAKE

I had some friends come up to the cabin that are in college currently. Two of them had a birthday while we were there. This was one of the birthday desserts I made.

CHOCOLATE SHEET CAKE

Chocolate Cake: 
2 sticks salted butter
1 C boiling water
4 heaping T cocoa
2 C flour
2 C sugar
1/4 t sea salt
1/2 C buttermilk 
(No buttermilk? 1/2 C milk & 1 T lemon juice or vinegar - let it sit for a couple of minutes)
2 eggs, beaten
1 t vanilla
1 t baking powder

Icing: 
1/2 C chopped pecans
1 3/4 sticks butter
4 heaping T cocoa
6 T milk
1 t vanilla
2 - 3 C powdered sugar, depending on consistency

Melt 2 Sticks butter in a saucepan. 
Add 4 heaping T cocoa & mix well.
Pour in boiling water & mix well.
Turn on stove to medium high heat. Bubble for approx. 30 seconds. Turn off the burner and set aside.

In a bowl, mix flour, sugar, and salt. Mix well. 
Pour the chocolate butter mixture over and stir slightly.
Pour buttermilk in. Stir.
Add eggs, vanilla & baking powder. Mix well.


Pour into greased baking sheet.
Bake in preheated oven 350 degrees for 20 minutes. 

While this sinful cake is baking, make the icing to pour over the cake within five minutes of it coming out of the oven. Chop the pecans and set aside.
In a saucepan, melt butter. Add cocoa & stir well; cook on medium high heat and let bubble for approx 30 seconds. Remove from heat. Add milk, vanilla and powdered sugar (1/2 C at a time). Add chopped pecans.



Pour onto the hot cake. Let sit for at least 15 minutes before serving.
