WHAT'S FOR DINNER? COUSCOUS CASSEROLE

This is so simple and easy...you can even cook & assemble the day before, just keep it in the fridge OR make one and toss it in the freezer, just defrost in the morning for dinner that night. 

For those that don't like rice, this is a perfect alternative. Couscous is pasta.



 COUSCOUS CASSEROLE

olive oil
1 med chopped onion
1 T minced garlic
1 lb ground beef, pork, lamb, turkey, chicken or ricotta cheese
salt and pepper
2 med zucchini or yellow squash, sliced
1/4 C water or broth
4-6 C pasta sauce
1 C couscous
grated Parmesan cheese

Preheat oven to 400 degrees. Spray a baking dish with non stick spray. 

Heat a couple of T of oil in a skillet over med high heat then add onion and garlic and cook for 5 min. Add meat and stir; season with salt and pepper. Cook for 8-10 min. 

While meat is cooking, put squash slices on baking sheet, drizzle with olive oil and sprinkle with salt. Roast in oven for 5-8 min until tender. Remove and reduce temp to 350 degrees.

Put water/broth and pasta sauce in saucepan or Dutch oven and heat over med heat. Bring to a gentle bubble then stir in couscous, cover and turn off the heat. Let sit for 10 min.

Spoon thin layer of couscous mixture into bottom of the baking dish. 


Top with squash.


Then some meat.


Repeat until you've used all the ingredients, finishing with couscous mixture. 

Sprinkle with Parmesan. Bake 25 minutes. Serve hot and store left overs in refrigerator.
