RECIPE #89: ON A DIET? Zucchini mock noodles

Whether you're on a diet, watching your calorie intake, gluten free, diabetic, 
  • have wheat or other allergies, this is a great alternative.

  • servings: 2

  • 3 zucchini OR 2 zucchini & 1 yellow squash for a colorful mix
  • 1 teaspoon salt
  • 1 tablespoon and 1-1/2 teaspoons butter OR olive oil
  • 1/2 clove garlic, minced
  • salt and black pepper to taste
  • 2 tablespoons grated Parmesan cheese (optional)

Cut zucchini into thin, noodle-like strips. Toss with salt, and place in a colander to drain for 30 minutes.

Bring a pot of water to boil. Add zucchini; cook for one minute. Drain; rinse immediately with cold water to stop cooking.

Heat butter or oil in a large skillet over med-high heat. Add zucchini and garlic; cook and stir until just tender, about 5 minutes. Season to taste with salt and pepper. Sprinkle with Parmesan cheese (optional).
