RECIPE #82: For Canaan's birthday - Double Chocolate Muffin Ice Cream Cones

I had to bring something sweet to celebrate Canaan's 2nd birthday at soccer today. 

These are super easy to make and fun to eat! 

Have the kids help you make them. 



Double Chocolate Muffin Ice Cream Cones
makes 12-14

2 T cocoa powder
18.25 oz package Double Chocolate Muffin Mix
3/4 C water
1/4 C vegetable oil OR apple sauce or other puree
2 large eggs
12-14 flat bottomed ice cream cones without holes or cracks
frosting (I made homemade butter cream frosting. You could buy the frosting if you prefer.)
Assorted food coloring
colored sprinkles

Preheat oven to 350 degrees. Wrap foil around cone bases and place upright in an ungreased muffin pan. I didn't do this step and I wish I had! 

Add cocoa to muffin mix. Mix together the water, oil & eggs and stir in the muffin mix. Fill each cone with about 2 to 3 tablespoons of muffin mixture. Do not overfill the cone or it may bake over the sides.


Place cones in the oven and bake for about 20 min at sea level or approx 30 - 32 min at high altitude.


Allow to cool completely. Ice tops with frosting that you may tint with assorted food coloring and decorate with colored sprinkles.
