RECIPE #91: Spinach Twisty Hot Rolls

I made these for lunch yesterday. Ryan & Canaan also had them for breakfast.

SPINACH TWISTY HOT ROLLS
makes 12

2 pkg frozen spinach, thawed & squeezed
2 green onions, chopped
1 minced garlic clove
4 T butter, divided
1/4 C Parmesan cheese
homemade dough OR refrigerated pizza or hot roll dough

Use frozen spinach because it's easier.
Put the spinach in a microwavable bowl and cook according to package directions.
Put the spinach in a strainer, the place the strainer back on top of the bowl the spinach was cooked in and another clean bowl directly on top of the spinach. Now press your hand down on the top bowl to release as much water as possible.

Saute onions & garlic in 1 T butter.

Transfer to bowl, Add cheese, basil, oregano & spinach.

Have your homemade dough or even refrigerated pizza dough or other hot roll dough.
Here's my recipe, and you can use all white flour if you prefer:

Divide it in half. Place one half in the freezer for other time.

Roll into approx 12"x10" rectangle.

Melt 3 T butter and brush it on the rolled out dough.

Spread spinach mixture over one half of the dough lengthwise.

Fold rectangle in half. Pinch seams.

Cut into 12 one inch wide strips.

Twist strips and place on a pizza stone or greased cookie sheet.

Put in an 100 degree oven for 25 minutes to rise.

Take out and preheat oven to 375 degrees, then bake them for 12 to 16 minutes.

Serve immediately.
