WHAT WE'RE EAT'N? RED POTATO SALAD

RED POTATO SALAD
6 servings

1 lb new red potatoes, scrubbed clean
3 hard boiled eggs, chopped
1/2 lb bacon
1/2 finely chopped onion
1 C mayonnaise
salt & pepper, to taste

Bring large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15-20 minutes. Drain and put in refrigerator to cool.

Place bacon in deep skillet and cook over medium high heat until browned. Drain, crumble and set aside.

Chop the cooled potatoes, leaving skin on. Add to large bowl, along with eggs, bacon and onion. Add mayonnaise, salt and pepper to taste. 

Chill for an hour before serving.


PS I only had 1/2 C mayonnaise so this is a little drier than what it would be normally.
