I made two cheese balls for the showers on Sunday. With only 4 ingredients each, both are very easy.
CHIPPED BEEF CHEESE BALL
3 (8 oz) pkg cream cheese
1 bunch green onions, chopped
1 (8 oz) jar dried beef or 8 oz deli smoked beef
1 C pecans, finely chopped
Mix cream cheese, green onions and beef together well. Roll into a balls & roll in pecans. Wrap in plastic wrap and chill at least 2 hours. Serve with crackers.
GREEN CHEESE BALL
1 can pork & beans
4 C shredded cheddar cheese
2/3 C jalepano relish OR green chili
1 C chopped parsley
Combine all but parsley. Use a food processor to blend well. Beat until smooth. Either chill for at least 2 hours then shape into logs or balls and roll in parsley OR roll into balls and then in parsley, wrap in plastic wrap and chill for at least 2 hours. Serve with an assortment of crackers.
