SEAFOAM FROSTING

2 egg whites
1 1/2 C packed light brown sugar
1/3 C water
1 T light corn syrup or 1/4 t cream of tartar
1 t vanilla
In top of double boiler, combine egg whites, brown sugar, corn syrup and water. With portable electric mixer or rotary beater beat about 1 min to combine ingredients. Cook over rapidly boiling water beating constantly about 7 min or until stiff peaks form when beater is raised. Remove from boiling water. Add vanilla; continue beating until frosting is thick enough to spread about 2 min. Makes enough to fill and frost an 8" or 9" two layer cake or to frost a 13" x 9" x 2" cake.
I chose to make a whole wheat banana cake that Ryan & Canaan liked but it I didn't. It's was too heavy and thick to be cake, I thought. That's why I'm not posting the recipe for that. I think you'd be disappointed like I was.

I have a banana cake recipe that is awesome! I actually use that recipe when I make ban bread instead of a bread recipe. It is very light and fluffy and yummy. It would taste yummy with icing. I'll send it if you want.
