Biscuit Shortcake
serves 4
2 C flour
4 t baking powder
1/2 t salt
1 T sugar
2 T shortening
6 T milk
Sift together dry ingredients. Chop in shortening with a pastry blender.
Moisten with milk. Pat patties to 1/2 inch thickness or pat the whole thing to 1/2" thickness and use a cookie or biscuit cutter to cut rounds. Transfer to a greased cookie sheet or ungreased pizza stone. Bake at 400 degrees for 15 to 20 min.
Split (optional), butter (optional), and put together with strawberries and whipped cream. (below)
Strawberry Shortcake
1/2 C sugar or splenda
1 pint fresh or frozen strawberries
2 C heavy whip cream
1/2 C sugar
Use fresh or frozen strawberries, adding 1/2 cup sugar or splenda to 1 pint of sliced berries. Let stand at room temperature until juicy, about 30 min to 1 hour.
Pour cream into bowl.
Whip cream on high adding in sugar gradually. Beat until stiff. Now lick the beaters or give them to the kids...it's too good to waste!
Layer your serving container with the shortcake, whipped cream & strawberries, saving enough cream and fruit for the top.
Refrigerate until ready to serve.
