Homemade chicken noodle soup is great when you're sick. There was just something special about my mom always giving it to me when I was sick growing up.
HOMEMADE CHICKEN NOODLE SOUP
Young chicken (make sure to remove neck, giblets, etc.)
water
1/2 C or more vegetables (onions, celery, carrots, potatoes, etc.), diced small or minced
1/4 C pasta (even break spaghetti into 2" pieces)
salt and pepper to taste
Boil the chicken whole in a stock pot, water should cover chicken, for approx 12- 15 minutes.
Remove chicken.
Strain broth to remove solid fat & film. Place back into stock pot and add noodles & vegetables.
Remove skin & shred or cut up chicken into bite sized pieces. Add to pot.
Cook for 5-10 min more.
Season with salt and pepper if desired.
Serve warm.
TIP: Freeze in individual serving sized containers or Ziplocs for easy microwave reheat meals for those sick days.
