Butternut squash:
In a large skillet over medium heat, melt 3 T butter or ghee. When slightly browned, add 1 T thyme. Briefly remove from heat and add 1 1/2 lb peeled, cubed butternut squash. Place back on heat. Toss to coat. Bring the temperature up to medium high heat. Brown on several sides of butternut squash, takes around 5 minutes turning every 1 1/2 minutes. Turn heat to low and cover for 20 minutes. Serve.
Chicken:
Place 2 lbs chicken in shallow dish. In a bowl, mix 1/4 C olive oil, 1/4 C lemon juice, 2 T lime juice, 1 T minced garlic, 1 T coconut aminos or gluten free soy sauce, 1 T cumin & 2 t apple cider vinegar. Pour over chicken. Cover and marinate at least an hour. Preheat grill or skillet to medium heat. Without overcrowding, place chicken on grill, season with salt and pepper & cook through, turning occasionally, about 15 minutes total per batch.

In a mixer, mix 1 minute on medium high speed:
1/4 C coconut oil
1/4 C raw almond butter
1 egg
Add and mix to combine:
1/4 C honey
2 t vanilla
1/4 t lemon juice
Add and mix for 30 seconds:
1/2 C coconut flour
1/4 t baking soda
Drop by tablespoonfuls onto parchment lined cookie sheet.
Flatten slightly with the back of the spoon or with a fork.

2 C berries
(strawberries, blackberries, raspberries, blueberries, etc.)
1 C another kind of berries
Toss with:
1 T lemon juice
1/2 T coconut or sweet potato flour
Pinch allspice
1/2 t cinnamon
Add to baking dish.
If it's glazed pottery or glass dish, there's no need to grease.

WHAT WE'RE BAKING? PALEO GLUTEN FREE CHOCOLATE BANANA BREAD
Preheat oven to 350°. Using coconut oil, grease loaf pan. Beat 2 T melted coconut oil with 4 eggs, 3 T honey, 1 t vanilla & 1/2 t apple cider vinegar. Sift in 1/2 C coconut flour, 1/4 C almond flour, 1 t baking soda & 1/2 t sea salt. Mix well. Add in 1/2 C coconut or almond milk and 3 mashed bananas. Mix well. Fold in 1/2 C non dairy dark chocolate chips. Bake around 45 minutes or until a toothpick inserted in the middle comes out clean. Cool in pan for 15 minutes before removing from pan. Freezes great!

My sweet friend Linda from Colorado asked me for some suggestions on how to make eating Paleo a little easier for those that work and don't want to spend a lot of time in the kitchen. I had to take my own advice. Spend about an hour every 3 weeks and make freezer smoothie bags. Just take one bag out of the freezer, add the ingredients to the blender and the liquids it says on the ziploc bag. Blend well and serve. Great for breakfast and/or lunch.
Make sure to write on the bag what kind of smoothie it is and what you'll need to add to it.
