WHAT WE'RE COOKIN'? BROWNIE PANCAKES - low carb, gluten free, paleo, diabetic friendly

My kids and I think they taste great! But don't expect these to be pretty.

1 C almond flour
1/2 C coconut flour
1/3 C xylitol (if Paleo, you could us honey, agave or maple syrup)
1/2 t baking soda
1/4 t sea salt
2 T unsweetened cocoa powder
2 oz 100% dark chocolate, chopped
3 large eggs
1 C unsweetened almond milk (or other type of milk)
1 t vanilla
1/2 t apple cider vinegar

Mix the dry ingredients then the wet, add together and mix well.
Heat a non-stick skillet over low heat. Using vegetable oil, butter, ghee or coconut oil, make silver dollar sized pancakes. Flipping with edges are dry.

Top with whipped cream and/or Walden's pancake syrup.

If Paleo, you could top with Date Lady syrup, honey, agave or maple syrup.

1 C pretzels, broken up
1 1/2 C candy corn
1 lb white almond bark, melted (read instructions on package)
6 T variety of Halloween sprinkles/candy

Line a cookie sheet with parchment paper. Spread sandwich cookies, pretzels & candy corn.
Melt chocolate. Drizzle chocolate carefully over candy and cookies. Working quickly, sprinkle Halloween sprinkles or candy over chocolate. Refrigerate until firm. Break into pieces and serve.
