WHAT'S FOR BREAKFAST: FLUFFY BLUEBERRY PANCAKES

4 servings

3/4 C milk
2 T vinegar
1 C flour
2 T sugar
1 t baking powder
1/2 t baking soda
1/2 t salt
1 egg
2 T melted butter
1 C blueberries

Mix milk with vinegar in a bowl and set aside for 5 minutes to sour.
Combine flour, sugar, baking powder, baking soda and salt in a large bowl.
Whisk egg and butter into soured milk. 
Pour the flour mixture into the wet ingredients and wish until lumps are gone.
Fold in blueberries.
Heat large skillet over medium heat and coat with non stick cooking spray.
Pour 1/4 cupfuls of batter onto hot skillet. 
Cook until bubbles appear on the surface. 
Flip with a spatula and cook until browned on the other side.

I like mine with Karo syrup.
