WHAT'S FOR DINNER? CHICKEN SALAD PITA SANDWICHES

This is a fun and super easy way to make sandwiches with your family and/or friends. Ryan & Canaan went crazy for them! For Canaan, I used a compartmentalized kids plate to separate everything out. He was eating julienned carrots and cucumbers, olives, etc. and dipping it in dressing.

Also, if you don't have a julienne at home, Pampered Chef has a great one and kids will gobble up what you julienne.


CHICKEN SALAD PITA SANDWICHES

Pita flat breads, halved
lettuce leaves (I LOVE butter lettuce)
choice of dressings (Trader Joe's Goddess dressing is our favorite)
cubed mozzarella cheese
sliced ripe olives
sliced radishes
julienned cucumbers
julienned carrots
cubed or shredded cooked chicken (to make it easy, I bought a roasted chicken from the grocery store and hand shredded it)

Arrange everything on a plate or in individual bowls. 


Allow everyone to make their own sandwich.
Placing the lettuce in the pita halve first will make it easier.
