What's for dinner?: Chicken Fried Steak with Gravy & Broiled Asparagus

I can't tell you how excited I am that I finally made gravy that was really good. I thought I was cursed with gravy like I am with cookies...not any more!!


Chicken Fried Steak with Gravy
serves 2

2 beef cube steaks
1 C flour
1 t baking powder
1/2 t baking soda
1/2 t pepper
1/4 t salt
3/4 C buttermilk (3/4 C milk + 1/2 T lemon juice or vinegar)
1 egg
vegetable oil for frying
2 T flour
2 C milk
salt & pepper

Heat deep fryer or deep skillet with vegetable oil. Mix flour, baking powder, baking soda, pepper and salt in a bowl or shallow dish. In a separate bowl or dish, stir buttermilk & egg. Dredge each steak first in flour then in egg mixture then back in flour, coating completely & patting flour onto each steak. Fry steaks in deep fryer for 3-4 minutes or in skillet on 325 degrees for 3-5 minutes per side. Place fried steaks on a plate with paper towels to drain.

GRAVY:
Reserving 1/4 C of oil with as much solid remnants as possible, place in hot skillet over medium low heat. Whisk in 2 T flour, scraping bottom of pan to release solids into gravy. Stir in milk slowly then raise the temp to medium high heat and bring gravy to a simmer. Cook until thick 6-10 min. Season with salt and pepper.

Spoon gravy over the steaks. Serve immediately.


Broiled Asparagus

Wash asparagus & cut off 1/4" to 1/2" of ends. Place in pan & drizzle olive oil over (1-2 T) then sprinkle with coarse sea salt. Broil on high, check every 3 minutes and turn until done.
