Recipe #8, #9 & #10: A peppered twist on burgers & fries

I was over at Steph's today and we watched a little of Rachael Ray's show. Today was Poblano Popper Super-Sliders with this avocado sauce. You can see her recipe here: http://www.rachaelrayshow.com/food/recipes/poblano-popper-super-slides_REAL/

They looked so good that I rushed home to find I didn't have all the ingredients I needed to make Rachael Ray's stuff so I improvised and made up my own burgers topped with my own version of an avocado sauce and seasoned french fries. Hope you enjoy...Ryan's going back for seconds as I type this.

Burgers:
3 cloves garlic, diced; 1/4 white or yellow onion, diced; 2 fresh jalapenos, seeded and diced - Saute altogether with 1 T olive oil over med high heat. When caramelized and onions soft, add the sauteed mixture to 1 lb ground beef. Then add 1/2 t cumin, 1/2 t paprika, 1/2 t sea salt, 1/4 C beer & 1 T worcestershire sauce. With gloved hands, mix altogether. Form into 4 to 5 patties and cook on med-high heat in the same saute pan with 1 T olive oil. Cook 7 minutes flipping once for medium well. After you flip it, add 1 slice of pepper jack cheese to each patty. Cover and set aside until ready to serve. When you're ready, place the patty on the bun, top with avocado sauce (recipe below) and sliced red onions.

Avocado sauce:
1/8 white or yellow onion, diced
1/2 jalapeno, seeded & diced
1 juice lime
2 avocados, diced
1/4 C softened cream cheese
Mix altogether well.

Seasoned fries:
6 medium potatoes, cut how you like them - I use a vintage french fry cutter
1 T & 1t olive oil
1 T seasoning mix (1T paprika, 1T garlic powder, 1T chili powder, 1T onion powder)
               save remaining for another time
1/2 t sea salt or more to taste
Preheat oven to 400 degrees. Wash and cut potatoes. Mix olive oil & seasoning mix together. Add to potatoes and mix to coat.
Spread on baking pan.
Bake for 45 minutes turning fries once half way through.

Seriously, friend, I have to work hard to keep up with/write down/bookmark your good blog posts. I love the seasoning recipe for the fries. Yummy. BTW, I tried a WONDERFUL spinach salad recipe that you would love. I will try to email it to you.
