RECIPE #22: THANKSGIVING Cranberry Salad

I really really really hate that awful canned cranberry sauce! Here's a recipe from my mom that I love and is a great alternative:

Cranberry Salad

2 packages raspberry gelatin
2 C hot water
1/2 lb cranberries, chopped in blender
2 1/2 C sugar
2 C nuts, chopped (I use walnuts or pecans)
1 can (20 oz) crushed pineapple
1 fresh coconut, grated in blender
1 1/2 C pineapple juice

Mix gelatin with hot water. Add the rest of ingredients. Refrigerate overnight.
