Recipe #2: Stromboli (or Pizza Burrito)

Now I want to make this perfectly clear: I'm no expert and I'm not a chef. These are just my experiences. So when you see pictures and it's not perfect, you'll know why. Thanks!

1. Make your pizza dough.

2 cups warm water
1 T sugar
1 pkg yeast (or 2 1/4 t)
5 to 6 cups flour (I use 1/2 whole wheat, 1/2 unbleached white)
Pour water into the bowl. Add sugar; stir to dissolve. Sprinkle with yeast, and let stand until yeast begins to bubble, about 5 minutes. Beat in 1 cup flour into yeast on low speed until combined. Beat in coarse salt; add 3 1/2 cups flour, and combine. Continue beating/stirring until dough pulls away from bowl, 1 to 2 minutes. Add 1/2 cup flour. Beat 1 minute more. If dough is sticky, add up to 1 cup more flour. Transfer to a lightly floured surface; knead until smooth, 1 minute.  
 
2. Roll out the pizza dough to form a circle or rectangle. I was in a hurry and made it into one stromboli but that's been a mistake. So make two out of this dough recipe. You'll be happier you did.

3. Spread out cheese into the middle

 
4. Spread out your fillings. I mixed up pepporoni, pasta sauce, chopped broccoli, chopped artichoke hearts & fresh parsley. I overstuffed mine (you'll see below) so try not to make my mistake.
 
5. Fold the ends
6. Then the sides


7. Take a little water and seal the edges.


8. Roll it onto your pizza stone or in my case anything that's big enough to hold it. Seam side down.

9. Cut slits into the top to vent.

10. Make an egg wash (beat 1 egg & tablespoon of water) and brush onto top dough.

11. Bake at 400 degrees for 30 min.
12. Cool 5 min. Cut and serve.

Now mine turned out looking like Jabba the Hut. I do hope yours looks prettier but tastes just as good!



TIP: Make individual ones for pizza pockets.
