WHAT WE'RE BAKING? MAMA DOT'S HOMEMADE BREAD

I come from a long line of fabulous cooks. My great grandmother was an amazing cook too.
As I don't measure when I bake bread & this isn't one of our secret family recipes,
I'll make it easy for you and put her measurements down. You're welcome :)

For all you VEGANs: leave out the egg and put more oil in.

MAMA DOT's BREAD

1 pk yeast or 2 1/4 t yeast
2 C warm water
1/2 C sugar or honey
1 t salt
1 egg
1/3 c oil
3 1/2 to 4 C flour OR 2 C white flour & 2 C whole wheat flour

Mix yeast, water & sugar together.
Let stand for 5 min or until the yeast is bubbly and growing, called proofing.
Add salt, egg & oil.
Sift in flour & mix well until it forms a sticky dough. (I sprinkle flour on top but this really is unnecessary and I'm not even sure why I do it.)






Rise 1 hour or until doubled.
Place on floured surface and knead well using extra flour as needed.
Put in a greased mold or form on a pizza stone. Let rise for another 15 min.
Sea level: bake 350° for 15-20 min
High Altitude: bake 350° for 30-35 min
